Red Velvet Cake Recipe 1

Ingredients:

1/2 cup shortening

2 eggs

2 1/2 cups sifted flour

1 1/2 cups sugar

2 ounces red food coloring

1 tablespoon white vinegar

2 teaspoons cocoa

1 cup buttermilk

1 teaspoon vanilla

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon almond extract

1 teaspoon orange extract

Directions:

Mix baking soda and vinegar together and set aside. Cream shortening, sugar and eggs. Make a paste of food coloring and cocoa. Add eggs to sugar mixture, then add buttermilk and alternate with dry ingredients. Add vanilla, orange and almond extracts. Add vinegar and baking soda last. Bake in two 9 inch round pans at 350 degrees for 30 minutes. Frost with cream cheese frosting.

Cream Cheese Frosting

Ingredients:

3 ounce package cream cheese, softened

1/4 cup margarine

1 teaspoon vanilla

1 tablespoon milk

2 cups powdered sugar

1/3 cup pecans, finely chopped

Directions:

Beat together softened cream cheese and margarine, then add vanilla and milk, sifted powdered sugar and beat until smooth. Use 1/3 of the frosting to frost between the 2 layers and frost top of cake with remaining frosting and allow to drizzle down sides. Sprinkle nuts on top.

1/2 cup sugar

2 eggs

1 teaspoon vinegar

1 teaspoon baking soda

1 teaspoon cocoa

1/2 teaspoon salt

1 teaspoon baking powder

1/2 cup shortening

1/2 to 1 teaspoon red food coloring

1 cup milk

3 tablespoons flour

1 cup sugar

1 cup butter

Directions:

Combine milk and flour and cook until thick. Let cool then cream with sugar and butter. Ice cooled cake.
